Vegan Rocky Road with Simply Sweet popcorn

Here at Popcorn Kitchen, we love rocky road, but most recipes are not vegan (and some aren’t even vegetarian!) so in the spirit of Veganuary 2021, we have come up with our own delicious vegan rocky road recipe! The biggest thing to look out for is the marshmallows that are normally used. Whilst it is possible to get vegan marshmallows, most supermarket brands are not, and some contain gelatine which means they are not even suitable for vegetarians. To avoid having to search out vegan marshmallows, we have completely replaced them with popcorn, our choice in this recipe was Popcorn Kitchen’s Simply Sweet popcorn which is vegan (as are all snacking and sharing bags). Not only is this recipe easy, it is also great because it can be changed to suit your preferences, you can decide what your preferred biscuits, dried fruits and nuts are!   Ingredients: 50g vegan spread 175g vegan dark chocolate 3tbsp golden syrup 60g vegan biscuits, roughly broken or smashed 30g vegan popcorn (we used Popcorn Kitchen Simply Sweet) 50g dried fruit (we used cranberries) 50g nuts, roughly chopped (we used pecans)   Method:
  1. In a bain marie, melt the vegan spread, the dark chocolate and the maple syrup.
  2. Once fully melted, fold in the biscuits, the popcorn, the dried fruit and the nuts until combined.
  3. Pour into a baking tin or dish lined with either cling film or baking paper and push down with the back of a spoon.
  4. Put in the fridge for a couple of hours until set.
  5. Cut up and enjoy!
